Purple Sweet Potato Smoothie

INGREDIENTS

1 Purple sweet potatoes

1 cup of plain Greek yogurt, unsweetened

Juice of ½ lemon

Vanilla extract

Sweetener of choice

Freeze-dried yogurt cubes

Granola

Instruction:

  1. Peel and cut purple sweet potato into small pieces. Steam on high heat for 10 minutes or until soft.
  2. Add the steamed sweet potato, yogurt, lemon juice, vanilla extract into the blender.
  3. Blend until smooth and top with granola and freeze-dried yogurt cubes. Enjoy immediately!
